My talented friend Julie Wampler recently released her first cookbook called Dinner for Two. Julie is a food & travel blogger for Table for Two; her recipes call for fresh, low-cost ingredients which produce amazing entrees! The first recipe I made from the cookbook was the Mediterranean Couscous Salad with Grilled Chicken. I doubled the recipe so we would have leftovers--it was the right decision because it was delectable! It kept very well and can be eaten hot or cold. I don't prefer olives so I substituted red peppers in place of olives and added diced avocado on top. The dish is very easy to make and is both healthy and fresh. One thing I love about the Dinner for Two cookbook is how simple the steps are. I tend to feel overwhelmed from cookbooks that seem to have innumerable steps so this is the perfect cookbook for me. I also love the full-page gorgeous images of the food because it helps in deciding what you may be in the mood to eat that day. I also enjoy how the ingredients are separated out in a list on the side of the page for quick reference while cooking. I can't wait to make more recipes from this book!!
